Grain-free Waffles

My Grandma had the BEST recipe for waffles. They were amazing!! When I was about 12-14 years old or so, I found the recipe in my mom's recipe box, I dug out this ancient-looking waffle iron (which, now I refer to as "vintage") and tried whipping up a batch. My brother was my taste-tester at time and just fell in love.

These waffles became my signature item for years to come. (Thanks Grandma!) They were SO GOOD that they didn't even need syrup. Nope ... just butter!



Fast forward about a dozen years or so to the late 90s, the "vintage" waffle iron I loved was gone. Not only did my brother remember I made these amazing waffles, so did my Mom. BOTH of them bought me a waffle iron for Christmas that year. Great minds think alike, huh? Ma'an, do I ever use that waffle iron (yes, I returned one of them - can't remember what I got in place of it, though).

My kids love waffles and so do I! So, when I went Paleo, it was one thing that was really hard to give up.

Give up? Nah!!

Took me a while but I've mastered making waffles that are so close to my Grandma's recipe.

Give these a try. Trust me - only need butter (now I use ghee) but if you must add syrup, please only use the real macoy! And, yes ... they're amazing.

Grain-Free Waffles, Just like Grandma's


Ingredients

3 eggs, separated
1/4 c coconut milk* waffle
1 c almond flour
2 T melted coconut oil*
1/2 tsp baking soda
1 tsp vanilla
Pinch sea salt (I use pink Himalayan)

Directions

  1. Pre-heat your waffle iron.
    If you need to grease/oil it, don't forget to do that!

  2. Place the egg whites in a medium bowl and beat until stiff peaks form. Set aside.

  3. In another medium mixing bowl, combine egg yolks & milk. Add vanilla & oil.
    Careful with the melted coconut oil as it can start to solidify if your milk and eggs are cold. That's OK - just keep mixing (or, use your hand mixer to ensure to get out all the lumps)

  4. Mix in flour, salt & baking sod into the egg, milk and oil mixture.

  5. Gently fold 1/3 of egg whites into batter (do this in 3 batches)
    DO NOT OVER MIX!

  6. Pour 1/2 cup batter onto hot, greased waffle iron and cook according to your waffle iron's directions (until your iron shows it's done).


I got 4 waffles with this recipe.

*If dairy is not an issue for you, go ahead and use cow's milk and butter.

Remember: Always use organic ingredients when possible.
